Quick 3 Ingredient Keto Protein Bagels

This recipe is designed to teach everyone how to make quick 3 ingredient keto protein bagels.

Ingredients

  • 226 grams cottage cheese I use small curd 4 %
  • 56 grams coconut flour (1/2 cup)
  • 10 grams baking powder (2 tsp)
  • optional instant dry yeast or dry seasonings of choice

Instructions

  • Preheat oven to 375 degrees. Line a large baking sheet with parchment paper or silicone baking mat. Set aside. Place the cottage cheese in a mesh strainer and allow the excess liquid to drain until the cottage cheese is thick. The less milkfat the more liquid you will have to drain.
  • In large bowl whisk together the coconut flour, baking powder and dry seasonings/yeast (if using) until there are no lumps. Stir in the strained cottage cheese until fully combined and crumbly. Press the mixture together until mixture forms a ball. Massage the ball for 2 minutes until the dough is smooth.
  • Once the dough is smooth divide the dough into 2 to 4 portions. (I made mini bagels, so I divided into 4 portions) Roll each portion into a smooth ball and place onto the prepared baking sheet. Place finger all the way through the center of each of the dough balls.
  • Wiggle finger around to stretch the hole. Keep dough smooth at all times while shaping the bagels. Leave space in between each bagel for an even cook. Use the palm of the hand and slightly flatten the tops of each bagel. In a small bowl whisk together 1 egg until fully combined
  • Lightly brush the egg evenly over the top of each bagel. Place in preheated oven. Bake at 375 degrees for 25 minutes or until golden. Remove from the oven. Allow to cool on the pan 10 minutes to firm up. Transfer to a wire rack and allow to cool completely before slicing.
