1lbzucchini, thinly sliced
80gramsfinely crushed pork rinds or keto dried bread crumbs
23gramsshredded cheese of choiceI use Colby cheese
2tspdry Italian seasonings or seasonings of choice, adjust to taste
2largeeggs

Instructions
Preheat and air fryer to 375 degrees. if no air fryer put some oil in a large skillet on the stovetop over medium heat. Preheat the skillet and oil 3 to 5 minutes or until hot. In a large Ziploc bag place all the crushed pork rinds and seasoning. Turn the bag to fully combine the pork rinds and seasonings.
Pou 1/4 of the dry mixture onto a wide plate. (do not put all at once it will get soggy) In a wide bowl whisk together the eggs and water until fully combined. Place the zucchini one slice at a time into the egg mixture and turn the zucchini to fully coat. Allow excess mixture to drain back into the bowl.
Place the coated slices one at a time into the dry mixture and turn to fully coat. Add more dry ingredients as needed. Use fingers or the back of the spoon and press the dry mixture into the zucchini to lock in. Line the air fryer with parchment paper or silicone baking mat.
Air fry at 375 degrees 7 to 10 minutes or until the coating is crisp. Allow the zucchini to sit in the air fryer 3 to 5 minutes before serving to avoid burning fingers.
