Ingredients
1 1/2lbsboneless chicken breasts or boneless thighs
3/4cupketo pizza sauce, adjust to desired amount
16mediumpepperoni slices
3/4cupshredded cheddar cheese or shredded cheese of choice
Instructions
Preheat an air fryer to 400 degrees for at least 5 minutes. If no air fryer, preheat an oven to 400 degrees and line a large baking sheet with parchment paper. Line clean worksurface with parchment paper or silicone mat. Place the chicken on the work surface, Cut slits about 3/4 of the way through the sides of each chicken breast half to create a 'pocket." If using thighs open the "hole" in the center of the underside of the thighs.
Spoon 2 to 3 TBS of the pizza sauce into each pocket in the chicken breasts. If using thighs Spoon 1 to 2 TBS of sauce into the hole. Top the sauce with 3 to 4 pepperoni slices (less for thighs) Sprinkle 2 to 3 TBS of the cheese over the pepperoni slices.
Close the pocket around the filling. If using thighs roll the thigh over the filling and place seam side down. Season the chicken with some dry Italian seasonings or dry seasonings of choice. Line the preheated air fryer with a silicone mat or parchment paper. (NEVER PUT LOOSE PARCHMENT PAPER INTO THE AIR FRYER WHEN PREHEATING THIS IS A FIRE HAZARD)
Place the chicken into the air fryer. Leave space between the chicken pieces for an even cook. Air fry at 400 degrees. 15 to 20 minutes or until the internal temperature is at least 165 degrees. If baking bake at 400 degrees about 30 minutes or until the internal temperature is at least 165 degrees. Open the air fryer or oven. Allow the chicken to sit in the air fryer or on the baking sheet at least 5 minutes.
If desired top with some more keto pizza sauce and shredded cheese. Place back into the air fryer or oven. Air fry 1 to 2 minutes or until the cheese is fully melted.
