Ingredients
1/2cupgranulated monkfruit sweetener or sweetener of choice (100 grams)
1/4cupbutter
2tspvanilla extract
1/4tspsalt
3/4cuppeanuts or nuts of choice (97 grams)for nut free use sunflower seeds, pumpkin seeds or any add-in of choice
Instructions
Line an 8 x 8 inch cake pan with parchment paper. Allow the paper to hang over the sides for easy removal. Combine the sweetener, butter, vanilla and salt in an 8 inch skillet over medium heat. Stir continuously for 7 to 10 minutes until the sweetener is fully dissolved and smooth.
Times may vary depending on the heat of the stovetop. Stir in the nuts or add-in of choice. Stir continuously until the mixture comes to a boil. Boil without stirring 3 to 5 minutes until the mixture is golden. Carefully pour the mixture into the prepared pan.
Spread evenly throughout the pan. Allow to sit for 1 hour or until firm and crisp. Once crisp break the brittle into desired size pieces and serve.
