Ingredients
226grams(1 cup) cottage cheese,
2largeeggs, room temperature
1tspvanilla extract, optional
48grams(1/2 cup) cocoa powder
150grams(3/4 cup) brown sugar substitute with
2oz(1/4 cup) keto chocolate chips, optional
Instructions
Preheat an oven to 350℉ Line an 8 x 8 inch cake pan with parchment paper and allow the paper to hang over the sides for easy removal. Blend the cottage cheese, eggs and vanilla extract in a small blender for 1 minute or until completely smooth. Set aside.
Sift the cocoa powder and sugar substitute into a large mixing bowl until there are no lumps. Stir the cottage cheese mixture into the dry ingredients until fully combined and a smooth batter forms. Gradually fold in the chocolate chips until they are evenly dispersed throughout the batter.
Pour the batter into the prepared cake pan. Use a spatula and spread the batter evenly throughout the pan. Bake in the preheated oven for 25 to 30 minutes or until the edges are fully set.
Remove the brownies from the oven and allow to cool in the pan at least 30 minutes or until firm. Once firm, grasp the overhanging parchment paper and transfer the brownie slab to a wire rack. Cool completely be fore slicing.
