Ingredients
15grams(3 TBS) whole psyllium husk
56grams(1/2 cup) coconut flour
1/2tspsalt
1/2tsponion powder
1/2tspgarlic powder
1TBSpotato extract
227ml(1 cup) HOT water
Instructions
Preheat oven to 400 degrees. Lightly grease an oven fryer rack. Grind the psyllium husk until it is half of its volume. Pour the ground husk into a large mixing bowl. Sift the remaining dry ingredients into the mixing bowl until there are no lumps. Stir in the potato extract and hot water until fully combine.
Stir mixture for 1 minute until combined and mixture begins to clump together and form a dough ball. Knead the dough in the bowl for 2 minutes until smooth and slightly stretchy. Allow dough to sit a t room temperature 10 minutes to absorb and bind.
place dough on a lined worksurface. Cover the dough with parchment aper. Roll the dough out to a rectangle that is about 1/4 inch thick. Use a pizza v=cutter and cut the dough into strips that are about 3 inches long. Place the "fries: in a single layer on the prepared oven fryer basket. Leave space between the fries.
Bake in the preheated oven for 12 minutes until golden and firm. After the fries are baled, remove them from the oven and allow to cool in the pan 2 to 3 minutes to avoid burning fingers. Serve immediately with the dip of choice.
