Preheat the oven to 350 degrees. Line a large baking sheet with a silicone baking mat or parchment paper. Set aside. Combine the butter and both sweeteners in a large mixer bowl. Beat on medium speed for 1 minute until combined and smooth.
Scrape down the sides of the bowl and push the butter mixture to the center of the bowl. Stir in the eggs and vanilla until fully combined. Sift all the dry ingredients in a separate bowl until combined and there are no lumps. Gradually stir the dry ingredients into the wet ingredients until combined and a smooth dough has formed.
Scoop the dough out 1 TBS at a time onto the prepared baking sheet. Roll each scoop into a smooth ball. Slightly flatten the top of each dough ball. Pinch the bottom of the flattened dough portion into a "V" Push a small indent in the top of the dough portions to create a heart shape.
Use the back of a 1/2 tsp and press an indention in the center of each shaped cookie. Make sure the dough is smooth at all times. Spoon 1/2 tsp of the jam or filling of choice in the indentation. Place the cookies in the preheated oven. Bake for 10 to 12 minutes or until golden
Remove the baked cookies form the oven and allow them to cool on the pan 10 minutes until firm. Once firm, transfer the cookies to a wire rack and allow to cool completely before serving.
