- Preheat oven to 350 degrees. Line large baking sheet with parchment paper 
- In large mixing bowl whisk together almond flour, salt, baking powder, xanthan gum, and powdered Swerve until fully combined and no lumps are in the flour or powdered Swerve. Set aside 
- In a large mixer bowl combine melted butter, vanilla extract and egg.  
- Carefully add dry ingredients to wet ingredients. Beat on low 10 seconds or until dry ingredients are moist. 
- Increase speed to medium. Beat for 30 seconds or until everything is fully combined and no dry ingredients are left in the bowl 
- Scoop batter 1 TBS at a time onto prepared baking sheet. Shape each scoop into a tight ball 
- Bake at 350 degrees for 12-15 minutes or until the edges are golden. THEY WILL BE SOFT BUT WILL FIRM AS THEY COOL 
- Let cool on the pan for 15-20 minutes or until firm. Transfer to a wire rack until completely cool
