Ingredients
4largeeggs
125grams(1/2 cup) cottage cheese,
1oz(1/4 cup) shredded cheddar cheese
1/4tspsalt
1/8tsppepper
dry parsley, crumbled bacon, finely chopped bell peppers or toppings of choice, optional
Instructions
Preheat the oven to 350 degrees. Lightly grease 9 silicone muffin cups then set them aside. Place all the ingredients except toppings into a medium blender. Blend on high 30 seconds or until completely smooth. Divide the batter evenly between the prepared muffin cups. (about 3 TBS batter in each cup) If desired top the bites with the topping of choice.
Place the bites in the preheated oven. Bake for 20 to 22 minutes or until firm. Once baked, remove the bites from the oven and allow to cool in the pan 3 to 5 minutes. They will deflate slightly as they cool. Once cooled remove from the pan and serve.
