Ingredients
28grams(1/4 cup) coconut flour
5grams(1 tsp) baking powder
1/4tspsalt
7grams(1/2 TBS) granulated monk fruit sweetener
2largeroom temperature eggs
15ml(1 TBS) coconut oil, melted
60grams(1/4 cup) room temperature Greek yogurt
60mlroom temperature coconut milk
1tspmaple extract
1/2lbcooked sausage, crumbled bacon, vegetables or add-ins of choice, optional
Instructions
Preheat the oven to 400 degrees. Lightly grease 6 silicone muffin cups then set them aside. Sift the dry ingredients into a large bowl until combined and there are no lumps. Stir the wet ingredients into the dry ingredients until a smooth batter forms. Gradually stir in the add-ins of choice (if using) until fully combined.
Divide the batter evenly between the prepared muffin cups (about 1/4 cup batter in each cup) Place the bites in the preheated oven. Bake for 20 to 25 minutes until golden and a tester comes out clean. Once baked, remove the bites from te oven and allow to cool in the pan 8 to 10 minutes until firm.
Remove the cooled bites from the cups. Place on the serving plate of choice if desired top the bites with keto maple syrup or butter. Serve warm or at room temperature.
