Place sliced meat, onion, bell pepper, jalepeno, and beans into a large Ziploc freezer bag. If not using right away you can refrigerate it for up to 3 days or freeze it until ready to use
When ready to make the fajitas place all ingredients into a 5 quart crockpot.
Season lightly with salt and pepper to taste. Stir to distribute salt and pepper throughout meat mixture
In a small bowl combine tomatoes, cilantro, garlic powder, chili powder, ground cumin, and ground coriander seed. Stir to fully combine.
Pour tomato mixture over meat mixture and stir to combine. Cover and cook on low 8-10 hours or on high 4-5 hours
Place desired amount cooked meat mixture in center of tortilla. Top with cheese, sour cream, guacamole or any favorite taco toppings. Serve warm
