Ingredients

  • 15 ml (1 TBS) olive oil
  • 24 oz (1 small) jicama, washed, peeled and diced
  • 1 lb ground beef
  • salt, pepper and onion powder to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 medium zucchini, chopped
  • 1 medium red bell pepper, chopped
  • 8 oz (1 cup) beef broth
  • 4 oz (1 cup) beef broth

Instructions

  • Preheat the oil in a large skillet over medium heat for 3 to 5 minutes until warm. Add the jicama and lightly season with desired amount of salt, pepper and onion powder. Stir to combine the jicama, oil and seasonings. Cook stirring occasionally 8 to 10 minutes until the jicama begins to soften.
  • Crumble the ground beef into the skillet and season with a little more salt, pepper and onion powder. Cook stirring frequently 5 to 7 minutes until the beef is no longer pink. As the beef is cooking continue to break it into small pieces with a wooden spoon.
  • If need drain the excess fat off of the cooked beef. Sprinkle the dry seasonings over the beef and jicama and stir to combine. Add the zucchini and bell pepper then stir to fully combine. Cok stirring occasionally 3 to 4 minutes or until the zucchini and peppers begin to soften.
  • Stir in the broth until combined and bring to a low boil. Cover, reduce the heat to medium-low. Cook 5 minutes or until the jicama is fork tender and the liquid had slightly decreased. Uncover the skillet and sprinkle the cheese evenly over the beef and vegetables.
  • Cover and cook 2 to 3 minutes unti the cheese is fully melted. remove from the heat and spoon desired amount onto a serving plate. Serve warm.
