Ingredients
3TBSolive oil of choice
10ozfrozen mixed vegetables of choice
4ozchicken broth of choice (1/2 cup)
50gramsliquid aminos (3 TBS)
1tspbrown sweetener
1/2tspgarlic powder
1/2tspground ginger
1/2tsponion powder
5gramsxanthan gum (1 1/2 tsp)
12ozchopped cooked chicken breasts (2 cups)
Instructions
Preheat oil in a large skillet over medium-high heat until warm. Add the frozen vegetables and stir fry about 3 minutes or until vegetables are heated
Add the broth, liquid aminos, sweetener, and dry seasonings. Stir together until fully combined and the sweetener is dissolved
Sprinkle the xanthan gum over the vegetables and stir to fully combine. Keep stirring until the xanthan gum is fully dissolved
Add the chicken and stir to coat the chicken with the sauce. Bring mixture to a low boil.
Cover, reduce the heat to medium heat and simmer 3 to 5 minutes or until chicken is heated through and the sauce has thickened. Serve over rice substitute of choice
