Ingredients
- 3 TBS oil of choice
- 10 oz frozen mixed vegetables of choice
- 4 oz broth of choice (1/2 cup)
- 50 grams soy sauce or liquid aminos (3 TBS)
- 1 tsp brown sweetener of choice, adjust to taste
- 1/2 tsp garlic powder
- 1/2 tsp ground ginger
- 1/2 tsp onion powder
- 5 grams xanthan gum (1 1/2 tsp)
- 12 oz chopped cooked chicken breasts (2 cups)
Instructions
- Preheat oil in a large skillet over medium-high heat until warm. Add the frozen vegetables and stir fry about 3 minutes or until vegetables are heated
- Add the broth, liquid aminos, sweetener, and dry seasonings. Stir together until fully combined and the sweetener is dissolved
- Sprinkle the xanthan gum over the vegetables and stir to fully combine. Keep stirring until the xanthan gum is fully dissolved
- Add the chicken and stir to coat the chicken with the sauce. Bring mixture to a low boil.
- Cover, reduce the heat to medium heat and simmer 3 to 5 minutes or until chicken is heated through and the sauce has thickened. Serve over rice substitute of choice

Ingredients
- 8 oz packaged miracle rice or rice substitute of choice
- 2 TBS butter
- 1/2 tsp salt
- 1 TBS dry herbs and seasonings of choice I use garlic powder, onion powder, ground ginger, dry basil, dry oregano, and dry dill weed
Instructions
- Pour the miracle rice into a medium colander. Drain and rinse the rice for about 1 minute to make sure all the packaging liquid is rinsed completely (if using another rice substitute skip this step) Preheat a large skillet over medium high heat until warm. Place miracle rice in dry large skillet if using another rice substitute place a few table spoons of oil or water in the skillet while it is preheating
- Stir fry miracle rice about 5 minutes or until it begins to dry out. If using another rice substitute stir fry 5 minutes until heated
- Add the butter and stir until the butter is completely melted. Stir in the dry herbs and seasonings until the "rice" is fully combined. Stir fry another 5 minutes or until the flavors have set in and are heated through
