Preheat oil in a large skillet over medium heat 3 to 5 minutes or until hot. Add the shrimp, vegetables and dry seasonings. Stir to fully combine. Allow to cook 5 minutes, stirring occasionally or until heated through and vegetables are tender. In a small bowl whisk together the remaining ingredients until fully combined and the gelatin powder is fully dissolved.
Pour the sauce over the cooked shrimp and vegetables. Stir to coat the shrimp and vegetables with the sauce. Continue to cook and stir constantly for 1 minute until the sauce is slightly thickened. Spoon desired amount of shrimp mixture over the cooked keto rice or pasta substitute of choice.
