Ingredients
1/4 cupgranulated Swerve or granulated sweetener of choice
1/4tspsalt
3largeroom temperature eggs
2cups milk of choice
1tspvanilla extract
1/8tspground cinnamonmore or less according to taste
1/8tspground gingermore or less according to taste
1/8tspnutmeg or allspicemore or less according to taste
Instructions
In a medium saucepan with the heat of whisk together the Swerve and the salt until fully combined
Add the eggs and milk and whisk to fully combine.. Make sure the yolks are broken and fully distributed
Turn the heat on to medium. Whisk CONTINUOUSLY over medium heat for about 7-8 minutes or until the mixture begins to steam and the temperature reaches about 160 degrees. If you don't have a thermometer just look for steam beginning to rise. MAKE SURE TO WHISK CONSTANTLY OR YOU WILL END UP WITH SWEET SCRAMBLED EGGS.
Remove from the heat. Whisk in the vanilla and spices until fully combined
Pour into a mason jar or pitcher (I like to pour mine through a sieve to make sure it is smooth) and allow to cool to room temperature. Store covered in the refrigerator up to 3 days.

This recipe yields about 2 large servings1 serving contains about 5 grams of net carbs (if using coconut milk)
