Ingredients
56gramscoconut flour (1/2 cup)
5gramsbaking powder (1 tsp)
1/4tspsalt
38gramsbrown sugar sweetener of choice (3 TBS)I use brown monkfruit sweetener
2largeroom temperature eggs
2TBSbutter, melted and cooled
1tspvanilla extract
32gramsroom temperature Greek yogurt or sour cream (2 TBS)
1/4cupketo chocolate chips or add ins of choice, optional
Instructions
Line an air fryer basket or drawer with a silicone baking/air fryer mat. Do not use parchment paper. If no mat lightly spray the basket/drawer with cooking spray. Preheat the air fryer to 350 degrees for at least 5 minutes. While the air fryer is preheating Sift the dry ingredients into a large mixing bowl until there are no lumps
Stir in the eggs, butter, vanilla and yogurt until fully combined and a smooth dough forms. Gradually fold in the chocolate chips/add-ins until evenly distributed throughout the dough. Scoop the dough out 2 TBS at a time. Roll each scoop into a smooth ball. Place the dough balls in an even layer in the preheated air fryer. Make sure to leave space between each dough ball.
Air fry at 350 degrees for 5 to 7 minutes or until lightly browned on the outside and a tester comes out clean. Open the air fryer and allow the muffin balls to sit in the basket/drawer 5 minutes to firm up. Remove the muffin balls from the basket/drawer and transfer to a wire rack to cool completely. If desired roll the warm muffin balls in some powdered sweetener or topping of choice.
