5 Minute Keto Muffin Balls

Ingredients
- 56 grams coconut flour (1/2 cup)
- 5 grams baking powder (1 tsp)
- 1/4 tsp salt
- 38 grams brown sugar sweetener of choice (3 TBS) I use brown monkfruit sweetener
- 2 large room temperature eggs
- 2 TBS butter, melted and cooled
- 1 tsp vanilla extract
- 32 grams room temperature Greek yogurt or sour cream (2 TBS)
- 1/4 cup keto chocolate chips or add ins of choice, optional
Instructions
- Line an air fryer basket or drawer with a silicone baking/air fryer mat. Do not use parchment paper. If no mat lightly spray the basket/drawer with cooking spray. Preheat the air fryer to 350 degrees for at least 5 minutes. While the air fryer is preheating Sift the dry ingredients into a large mixing bowl until there are no lumps
- Stir in the eggs, butter, vanilla and yogurt until fully combined and a smooth dough forms. Gradually fold in the chocolate chips/add-ins until evenly distributed throughout the dough. Scoop the dough out 2 TBS at a time. Roll each scoop into a smooth ball. Place the dough balls in an even layer in the preheated air fryer. Make sure to leave space between each dough ball.
- Air fry at 350 degrees for 5 to 7 minutes or until lightly browned on the outside and a tester comes out clean. Open the air fryer and allow the muffin balls to sit in the basket/drawer 5 minutes to firm up. Remove the muffin balls from the basket/drawer and transfer to a wire rack to cool completely. If desired roll the warm muffin balls in some powdered sweetener or topping of choice.
