Ingredients
56gramscoconut flour (1/2 cup)
25gramsgranulated sweetenr (2 TBS)I use monkfruit sweetener
38gramsbrown sweetener (3 TBS)I use brown monkfruit
15gramsbaking powder (1 TBS)
1/4tspsalt
1TBSdry pumpkin spice
4largeroom temperature eggs
4ozpumpkin puree (not pumpkin pie filling) (1/2 cup)
60gramsroom temperature sour cream or plain yogurt (1/4 cup)
2TBSbutter, melted and cooled
1 1/2tspmaple or vanilla extract
Maple Glaze
100gramspowdered sweetener (3/4 cup)I use powdered monkfruit/allulose blend
15mlketo maple syrup (1 TBS)i use Lakanto or Choczero
15mlketo milk of choice (1 TBS), adjust according to desired thicknessI prefer coconut milk
1/4tspmaple extract
Instructions
Preheat air fryer at 350 degrees for 5 minutes. If no air fryer preheat an oven to 350 degrees. Lightly grease 8 silicone donut molds or silicone muffin cups. Set aside. Sift the dry ingredients into a large mixing bowl until there are no lumps. Stir in the wet ingredients until a wet dough forms,
Divide the dough evenly between the prepared molds (about 3 to 4 TBS in each mold) Spread the dough smoothly in the molds keeping the tops smooth and flat. Air fry at 350 for 6 to 10 minutes or until brown and a tester comes out clean.
If baking bake at 350 for 20 to 25 minutes or until golden and a tester comes out clean. Open air fryer/oven Let the donuts sit in the air fryer or on the baking sheet at least 5 minutes to firm up. After 5 minutes keep the donuts in the molds and transfer to a wire rack. Leto sit in the molds 20 to 30 minutes until able to easily remove from the molds
Remove from the molds. Place the donuts back onto the wire rack and cool completely before glazing them.
Maple Glaze
Place the glaze ingredients except the milk in a medium mixing bowl. Whisk until smooth. Add the milk in small amounts until it reaches your desired consistency. Place parchment paper under the rack that has the donuts on it. Spoon desired amount of glaze over each donut. Allow to sit 15 minutes for the glaze to set.
