Ingredients
1/3cupfreshly grated parmesan cheese
3TBSfine sunflower seed flour
3TBSgolden flaxseed meal
optional dry spices/seasonings of choice
1/4cupketo mayonnaise
Instructions
Preheat the oven to 425 degrees. Line a large baking sheet with parchment paper. In a wide bowl combine the cheese, sunflower seed flour, and flaxseed meal. Use hands and stir the dry ingredients together until fully combined. Set aside. Place the mayonnaise in a separate wide bowl. Set aside.
Cut the avocado into 1/2 inch thick (or desired size) slices. Place the slices one at a time into the mayonnaise and turn to fully coat the slices. Place the coated slices one at a time into the cheese mixture and turn to fully coat. Press the coating gently into the mayonnaise to make sure it fully sticks.
Place the coated slices onto the prepared baking sheet. Leave space between each slice. Bake at 425 degrees for 10 minutes. Turn slices and cook another 5 to 10 minutes or until golden and crisp. Remove the "fried" from the oven and allow to cool 3 to 5 minutes to avoid burning fingers. Serve immediately with salsa and sour cream or dip of choice.
