Preheat the oven to 400 degrees. Lightly grease 5 six inch sub/hot dog bun molds. For burger buns lightly grease 5 four-inch diameter silicone bun molds. Sift the dry ingredients into a large mixing bowl until there are no lumps if using fresh egg white other than egg white powder add the fresh egg whites with the wet ingredients).
Stir in the vinegar and the room temperature water until fully combined. Slowly add the BOILING water stirring as it is added. Stir for 1 minute until a thick wet dough/batter forms. Scrape the dough/batter into the center of the bowl and allow it to sit for 5 minutes until slightly thickened.
Divide mixture evenly among the prepared molds. Spread the mixture smoothly throughout each mold. Place the molds on a baking sheet. Bake at 400 degrees for 20 to 25 minutes until golden and a tester comes out clean. Remove the bread from the oven.
Allow to cool in the molds 10 to 30 minutes until firm. Remove bread from the molds and transfer to a wire rack. Allow the buns to cool completely before slicing them. When ready to use, turn the buns on their side. Cut the buns horizontally to create a top and bottom. Fill with desired filling.
