Quick Keto Hoagie or Hamburger Buns

Ingredients

  • 120 grams bamboo fiber or oat fiber (1 1/3 cups)
  • 120 grams very fine flaxseed meal (1 1/4 cups) I regrind my flaxseed meal, so it sifts through a mesh strainer then I weigh it
  • 15 grams baking powder (1 TBS)
  • 9 grams instant dry yeast (1 TBS), optional for flavor only
  • 1/2 tsp salt
  • optional dry seasoning, optional
  • 3 grams xanthan gum (1 tsp) or 1 TBS psyllium husk POWDER or use one of the xanthan gum substitutes in my xanthan gum substitutes article.
  • 56 grams egg white protein powder (2/3 cup) or can use 7 fresh egg whites
  • 45 ml apple cider vinegar (1/4 cup) for texture
  • 260 ml room temperature water (1 1/3 cups) omit if using fresh egg whites other than egg white powder
  • 300 ml BOILING water (1 1/4 cup)

Instructions

  • Preheat the oven to 400 degrees. Lightly grease 5 six inch sub/hot dog bun molds. For burger buns lightly grease 5 four-inch diameter silicone bun molds. Sift the dry ingredients into a large mixing bowl until there are no lumps if using fresh egg white other than egg white powder add the fresh egg whites with the wet ingredients).
  • Stir in the vinegar and the room temperature water until fully combined. Slowly add the BOILING water stirring as it is added. Stir for 1 minute until a thick wet dough/batter forms. Scrape the dough/batter into the center of the bowl and allow it to sit for 5 minutes until slightly thickened.
  • Divide mixture evenly among the prepared molds. Spread the mixture smoothly throughout each mold. Place the molds on a baking sheet. Bake at 400 degrees for 20 to 25 minutes until golden and a tester comes out clean. Remove the bread from the oven.
  • Allow to cool in the molds 10 to 30 minutes until firm. Remove bread from the molds and transfer to a wire rack. Allow the buns to cool completely before slicing them. When ready to use, turn the buns on their side. Cut the buns horizontally to create a top and bottom. Fill with desired filling.
