Ingredients
1lblean ground beef
2TBStaco seasoningsI used 1 tsp each of garlic powder, onion powder, dry oregano, chili powder, dry cumin, paprika
1tspsalt
1/2tsppepper
1/4cupsalsa
1TBStomato paste
1tspgranulated sweetenerI used Lakanto monkfruit sweetener
2cupswater
15ozblack soybeans, drained and rinsed or add-ins of choice (optional)
4keto hamburger buns
Instructions
Place the ground beef in a large skillet over medium heat. Season with dry seasonings of choice if desired. Cook the beef 5 to 7 minutes or until no longer pink. Stir and chop the beef into small crumbles while it is cooking. Drain the excess fat off of the beef. Stir in the dry taco seasonings, salt and pepper until fully combined.
Stir in the salsa, tomato paste and water until fully combined and paste is smooth. bring mixture to a low boil. Reduce the heat to low. Cover the skillet and simmer for 15 minutes. Uncover the skillet. Increase the heat to medium-high. Cook another 5 minutes until most of the liquid is absorbed.
Remove the mixture from the heat. Divide the mixture between the bottom portion of the keto buns. Top with the toppings of choice. Cover the filling with the top portion of the buns. Serve immediately.
