Preheat the oven to 350 degrees. Lightly grease 7 round donut cavities. Sift the dry ingredients into a large mixing bowl until there are no lumps. Set aside. Blend the cottage cheese ina small food processor until completely smooth. Add the blended cottage cheese to the bowl with the dry ingredients. Stir in the remaining wet ingredients until fully combined and a smooth, thick batter is formed.
Spoon the batter 3 TBS at a time into the prepared donut cavities. Spread the batter evenly and smoothly throughout the cavities. Bake the donuts in the preheated oven for 15 to 18 minutes or until golden. Once baked, remove the donuts from the oven and allow to cool in the donut cavities for 30 minutes until firm.
Once the donuts are firm, remove them from the cavities and transfer them to a wire rack. Allow the donuts to cool completely before adding the glaze or toppings of choice. Allow the glaze or topping to sit 5 minutes before serving.
