9ozbroccoli, chopped into 1 inch pieces
1largeegg
1/2 cupshredded mozzarella cheese (124 grams)
1/4cupfreshly grated parmesan cheese (23 grams)
1/2tspsalt
1/4tsppepper
1/2tspgarlic powder
1tspdry Italian seasonings
Instructions
Preheat oven to 400 degrees. Line a large baking sheet with parchment paper or silicone baking mat. Set aside. Chop or process the broccoli into "rice" size pieces. Steam the broccoli until tender. (I microwaved mine in a covered bowl for 2 minutes stirring between each minute)
Set the steamed broccoli aside and allow to cool at least 5 minutes. Stir in the remaining ingredients until fully combined and able to hold together. Scoop dough out about 1/4 cup at a time (or desired amount) onto the prepared baking sheet. Leave space between scoops.
Press each scoop out to a 4 to 4 1/2 inch circle (or desired size). You can press these thin like a tortilla or a little thicker (1/3 inch thick) for a bread substitute. Make sure to keep edges smooth for a sturdy "bread" Bake in preheated oven at 400 degrees for 20 to 25 minutes or until golden on the edges and firm.
Remove from the oven. Allow to cool on the pan for 5 minutes until firm. Transfer to a wire rack. Can eat these warm or at room temperature with the filling of choice.
