Quick Keto Broccoli or Cauliflower Thins

Ingredients
- 9 oz broccoli, chopped into 1 inch pieces
- 1 large egg
- 1/2 cup shredded mozzarella cheese (124 grams)
- 1/4 cup freshly grated parmesan cheese (23 grams)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- 1 tsp dry Italian seasonings
Instructions
- Preheat oven to 400 degrees. Line a large baking sheet with parchment paper or silicone baking mat. Set aside. Chop or process the broccoli into "rice" size pieces. Steam the broccoli until tender. (I microwaved mine in a covered bowl for 2 minutes stirring between each minute)
- Set the steamed broccoli aside and allow to cool at least 5 minutes. Stir in the remaining ingredients until fully combined and able to hold together. Scoop dough out about 1/4 cup at a time (or desired amount) onto the prepared baking sheet. Leave space between scoops.
- Press each scoop out to a 4 to 4 1/2 inch circle (or desired size). You can press these thin like a tortilla or a little thicker (1/3 inch thick) for a bread substitute. Make sure to keep edges smooth for a sturdy "bread" Bake in preheated oven at 400 degrees for 20 to 25 minutes or until golden on the edges and firm.
- Remove from the oven. Allow to cool on the pan for 5 minutes until firm. Transfer to a wire rack. Can eat these warm or at room temperature with the filling of choice.
