3 Ingredient Keto Avocado “Bread”

Ingredients
- 2 medium ripe avocados (about 5 1/2 oz each)
- 2 large eggs
- 4 oz shredded mozzarella cheese or cheese of choice
- optional dry seasonings for flavor
Instructions
- Preheat oven to 450 degrees. Line a large baking sheet with parchment paper or a silicone baking mat. Mash the avocados in a large mixing bowl until almost smooth. Stir in the eggs until fully combined. Gradually fold in the cheese until fully combined and the cheese is evenly distributed.
- Divide the mixture into 4 equal portions (or desired amount) and place onto the prepared baking sheet. (If dividing into 4 each portion is about 6 TBS) Spread each portion out to a circle that is about 4 1/2 inches in diameter (or desired size) Place in the preheated oven.
- Bake at 425 degrees for about 25 minutes or until golden and firm. Remove from the oven. Allow he "bread" to cool on the pan for 5 minutes. Transfer the "bread" to a wire rack. Serve this warm or at room temperature with the toppings of choice.
- Leftovers will keep in the refrigerator in an airtight container for up to 3 days.
