Keto Chocolate Chip Sandwich Cookies

Ingredients

  • 60 grams (8 1/2 TBS) coconut flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup butter,softened
  • 44 grams (3 1/2 TBS) brown monkfruit sweetener
  • 25 grams (2 TBS) granulated monkfruit sweetener
  • 2 large room temperature eggs
  • 2 tsp vanilla extract
  • 3 oz (1/2 cup) keto chocolate chips

Filling

  • 1/4 cup butter, softened
  • 125 grams (1 cup) powdered monkfruit/allulose blend
  • 1/2 TBS vanilla extract

Instructions

  • Preheat the oven to 375 degrees. Line a large baking sheet with parchment paper or silicone baking mat. In a medium mixing bowl sift together the dry ingredients until fully combined and there are no lumps. Set aside. In a lrge mixer bowl beat the butter and both monkfruit sweeteners on medium for 1 minute or until creamy.
  • Scrape down the sides of the bowl. Stir in the eggs and extract until fully combined. Gradually stir the dry ingredients into the wet ingredients until fully combined and a smooth dough id formed. Scrape down the sides of the bowl. Gradually fold in the chocolate chips until fully combined and evenly distributed throughout the dough.
  • Scoop the dough out 1 TBS at a time and place it on the prepared baking sheet. use hands and press each dough scoop out to the desired size and thickness. Leave space between each cookie. Place in the preheated oven, bake 8 to 10 minutes or until golden around the edges.
  • Remove the cookies from the oven and allow to cool on the pan 5 minutes to firm up. Once firm transfer to a wire rack and allow to cool completely before assembling the cookie sandwiches.

Filling

  • Beat all the filling ingredients together in a large mixing bowl on medium speed for 1 to 2 minutes until smooth and thick. Turn half of the cookies upside down on a clean worksurface. Scoop 1 TBS of the filling on the flat side of the upside-down cookies. Stack a plain cookie over the filling. Gently press the cookies together until the filling spreads to cover the entire inside of the cookies. Serve immediately
