Easy Keto Frosted “Animal” Cookies

This recipe is designed to teach everyone how to make easy keto frosted "animal" cookies

Ingredients

  • 57 grams (1/2 cup) coconut flour
  • 50 grams (1/4 cup) granulated sugar substitute I use granulated monkfruit sweetener
  • 5 grams (1 tsp) baking powder
  • 1/4 tsp salt
  • 6 TBS butter, softened
  • 1 large eggs
  • 1/2 tsp vanilla extract
  • 3 oz keto white chocolate chips I use Choczero white chocolate chips

Instructions

  • Preheat oven to 350 degrees, Line a large baking sheet with silicone baking mat or parchment paper. Set aside. Sift all the dry ingredients into a medium mixing bowl until there are no lumps. Set aside. Beat the butter on medium for 30 seconds or until smooth.
  • Scrape down the sides of the bowl and push the butter to the center of the bowl. Beat in the egg and vanilla until fully combined. Turn the mixer on medium-low. Gradually add the dry ingredients to the wet ingredients. Allow the ingredeitns to beat in after each addition.
  • Stop and scrape down the sides of the bowl as needed. Once fully added beat on medium 30 seconds or until a dough is formed. Scrape down the sides of the bowl and form the dough into a ball. knead the ball in hands for about 30 seconds or until smooth.
  • Form the dough back into a ball and place back into the mixer bowl. Place in the refrigerator and chill about 10 minutes or until the dough is firm. Remove the dough from the refrigerator. Place the dough onto a lined worksurface. Cover the dough with parchment paper.
  • Roll the dough out to 1/4 inch thick. Use cutters and cut the dough into desired size and shape. (I cut mine into mini bite size circle cookies.) Place shaped cookies onto the prepared baking sheet. Leave space between each cookie. Place back into the refrigerator.
  • Chill another 10 minutes or until the cookies are firm. remove from the refrigerator. Bake in the preheated oven at 350 degrees for 6 to 8 minutes or until lightly brown around the edges. Remove the cookies from the oven. Cool on the pan for 10 minutes until cookies are firm.
  • Transfer cookies to a wire rack and allow to cool completely before applying the coating. Melt the chocolate chips until completely smooth. Dip the cooled cookies one a t a time into the melted chocolate and turn to fully coat the cookies. Place the coated cookies onto a lined baking sheet.
  • If desired add food coloring to half of the melted chocolate to color half of the cookies. Immediately top the coated cookies with sprinkles. Place the cookies back into the refrigerator and chill another 15 minutes or until the coating is firm.
