Easy Keto Lupin Flour Bread Biscuits

#1 All Lupin Flour

  • 25 grams granulated monkfruit sweetener or granulated sweetener of choice (2 TBS)
  • 49 grams lupin flour (1/2 cup)
  • 1/4 tsp xanthan gum or konjac powder
  • 1/2 tsp baking powder
  • 123 grams plain or flavored Greek yogurt (1/2 cup) I use vanilla Greek yogurt
  • 1 large room temperature eggs
  • 27 grams butter, melted (1 1/2 TBS)
  • 1 1/2 tsp cold butter, cut into 6 small portions cut into 7 portions if using the lupin/coconut flour mix

#2 Lupin/Coconut Flour Mix (this is my favorite)

  • all ingredients the same except reduce the lupin flour to 30 grams (5 TBS), add 21 grams (3 TBS) coconut flour and increase the eggs to 2 eggs


  • Preheat oven to 400 degrees. Line or grease a 6 cup muffin pan (if using the lupin/coconut flour mix line or grease 7 cups) Sift the dry ingredients into a medium mixing bowl until there are no lumps. Set aside Stir together all the wet ingredients in a large mixing bowl until fully combined.
  • Add the dry ingredients to the wet ingredients. Stir until a smooth batter forms. Divide the batter evenly among the prepared muffin cups. Use a butter knife and spread the batter evenly and smoothly throughout the muffin cups. Place 1 portion of the cold butter on each one of the muffins.
  • Bake in a preheated oven at 400 degrees for 15 to 18 minutes or until golden. Once baked remove from the oven and allow to cool in the pan for 15 to 20 minutes or until firm. Once firm, remove the muffins from the molds and serve immediately or place on a wire rack and allow to cool to room temperature.
