Ingredients

  • 5 grams (1 TBS) whole psyllium husk
  • 30 ml (2 TBS) HOT water
  • 56 grams (1/2 cup) coconut flour
  • 8 grams (2 tsp) baking powder
  • 1/4 tsp salt
  • 1/2 TBS instant dry yeast
  • 1 tsp onion powder
  • 3 large room temperature eggs
  • 113 grams (1/2 cup) plain Greek yogurt
  • 2 1/2 oz shredded Colby cheese
  • 2 TBS butter, melted

Instructions

  • Preheat the oven to 350 degrees. Line a large baking sheet with parchment paper. In a small bowl use a fork and stir the whole husk and hot water together for 30 seconds or until the mixture is gummy. Set aside. Sift the dry ingredients into a large mixing bowl until there are no lumps. Stir the wet ingredients and the gelled husk mixture into the dry ingredients for 1 minute until a dough is formed.
  • Scrape down the sides of the bowl. Knead the dough in the bowl for 1 minute until it forms a smooth ball. Gradually stir the cheese into the dough until the cheese is evenly distributed throughout the dough. Divide the dough into 5 equal portions. Shape each portion into a smooth ball and place them on the prepared baking sheet
  • Press each dough ball out ta thick disc that's about 3 to 4 inches in diameter. Poke your finger through the center of each disc. Wiggle your finger around the create a hole that is a t least the size of a quarter in the center of each disc. Brush the top of each bagel with the melted butter. If desired sprinkle some everything bagel seasoning or topping of choice over the top of the melted butter
  • Bake the bagels in the preheated oven for 25 to 20 minutes or until golden. Once baked, remove the bagels from the oven and allow them to cool on the pan at least 20 minutes until firm. Once firm. transfer the bagels to a wire rack and allow them to cool completely before slicing and serving.
  • When ready to eat the bagels, turn them over on their sides. Cut each bagel in half horizontally to create a top and bottom. Serve these warm or at room temperature.
