Ingredients
- 240 grams (2 cups) keto ice cream
- 60 grams (1/2 cup) coconut flour
- 7 grams (1 1/2 tsp) baking powder
Instructions
- Preheat oven to 350 degrees. Line 7 x 3 inch loaf pan with parchment paper. Allow paper to hang over the sides of the pan. Soften the ice cream until it is soft enough to stir with a wooden spoon but not fully melted. Scoop the softened ice cream into a large mixing bowl
- Stir the coconut flour and baking powder into the ice cream until fully combined and a smooth dough has formed. Spread the dough evenly throughout the prepared loaf pan. Bake in the preheated oven for 35 to 40 minutes until golden and a tester comes out clean.
- Remove the bread from the oven and cool in the pan for 15 to 20 minutes until firm. Once firm grasp the overhanging paper, lift the bread out of the pan and transfer to a wire rack. Allow the bread to cool completely before cutting the bread into desired slices
