  • 37 grams coconut flour (1/3 cup)
  • 1/4 tsp salt
  • 5 grams baking powder (1 tsp)
  • optional dry spices
  • 3 large room temperature eggs
  • 1/4 cup butter, melted and cooled
  • 8 ml melted coconut oil or oil of choice (1/2 TBS)
  • 30 grams plain Greek yogurt or sour cream (2 TBS)
  • 151 grams shredded mozzarella cheese or cheese of choice (1 1/3 cup)


  • Preheat an air fryer to 375 degrees. If no air fryer preheat oven to 400 degrees. Lightly grease 6 oven safe ramekins or silicone muffin cups. Sift the dry ingredients into a large mixing bowl until there are no lumps in the dry ingredients.
  • Stir in the eggs, melted butter, oil and yogurt until a very wet dough forms (almost the texture of a thick batter) Gradually fold in the shredded cheese until it is evenly distributed throughout the dough. Divide the dough evenly between the prepared ramekins/molds (about 4 TBS in each mold)
  • Spread the dough evenly and smoothly throughout the ramekins/molds. Place in preheated air fryer or oven. Air fry at 375 degrees for 6 to 8 minutes or until browned. If using the oven bake at 400 degrees 12 to 15 minutes or until golden. Open the air fryer or oven. Allow the biscuits to sit in the air fryer or on the baking sheet for 5 minutes to begin to firm up.
  • Remove from the air fryer/baking sheet, keep the biscuits in the molds and place on a wire rack. Allow to sit 15 to 20 minutes or until the biscuits are firm enough to remove. Remove the biscuits form the molds, place back on the wire rack and allow to cool completely before cutting into a top and bottom.
