  • 74 grams coconut flour (2/3 cup)
  • 10 grams baking powder (2 tsp)
  • 38 grams brown sugar sweetener of choice (3 TBS) I use brown monkfruit sweetener
  • 1 tsp vanilla extract
  • 245 grams Greek yogurt (1 cup)
  • 1 large egg


  • 2 TBS butter, melted
  • 25 grams brown sugar sweetener (2 TBS) I use brown monkfruit sweetener
  • 1 tsp ground cinnamon


  • 47 grams powdered sweetener of choice (1/3 cup) I use powdered monkfruit/a;;u;ose blend
  • 1 TBS milk of choice


  • Preheat air fryer to 350 degrees for 5 minutes. If no air fryer preheat oven to 350 degrees. Sift the dry ingredients into a large mixing bowl until there are no lumps in the dry ingredients. Add the vanilla, yogurt and egg. Stir until a dough forms. Form dough into a ball and massage the ball in hands for at least 1 minutes until flexible and smooth.
  • Dough should be moist and flexible but not sticky. Form Line a clean worksurface with parchment paper. Sprinkle a very small amount of coconut flour or oat fiber on the paper to prevent dough from sticking. Form the dough back into a ball and place onto the lined worksurface.
  • Sprinkle lightly with a little more coconut flour or oat fiber. Place another paper over the top of the dough. Press/ roll the dough out to an 8 1/2 x 9 1/2 inch rectangle that is about 1/4 inch thick. Spread the melted butter evenly over the rolled dough.
  • Stir the filling ingredients (except the melted butter) together until fully combined and no lumps. Sprinkle the filling evenly over the melted butter on the dough. grasp the widest end of the parchment paper closest to you and roll the dough over the filling. Use the paper as a guide to help roll the dough. Keep the dough tight and smooth at all times.
  • Cut the dough into 1-inch thick slices. Use hands and slightly flatten the tops of the rolls to seal the layers. Line the preheated air fryer basket/drawer. Use spatula and transfer the rolls to the air fryer basket/drawer. Place rolls in single layer with space between each roll for an even cook. Air fry 350 degrees for 6 minutes or until browned.
  • If baking in oven, bake on a lined baking sheet at 350 degrees for 10 to 15 minutes or until golden. Once cooked, open air fryer and allow rolls to cool in the basket/drawer for 5 minutes to firm up. Transfer rolls to a wire rack and allow to firm up for another 3 to 5 minutes. While the rolls are cooling stir the glaze ingredients together until fully combined and smooth.
  • You can increase the amount of sweetener and milk depending on your desired thickness and amount of the glaze. Spoon the desired amount of glaze over the rolls and let them sit a couple of minutes so the glaze can soak in a little bit. Serve warm or cool to room temperature.
