Ingredients

  • 28 grams coconut flour (1/4 cup0
  • 22 grams cocoa powder (1/4 cup)
  • 50 grams brown or granulated sweetener (1/4 cup0 I use a combination of both
  • 5 grams baking powder (1 tsp)
  • 3 large room temperature eggs
  • 1/4 cup butter, melted and cooled
  • 1/2 tsp vanilla extract
  • 1/4 cup keto chocolate chips, nuts or add-ins of choice, optional
  • optional toppings

Instructions

  • Preheat air fryer or oven to 325 degrees. Lightly grease three 6 oz ramekins or 6 muffin cups/molds. Set aside. Sift the dry ingredients into a large mixing bowl until there are no lumps. Stir in the eggs, melted butter and vanilla extract until all the dry ingredients are moist and a smooth batter forms.
  • If desired fold in keto chocolate chips or add-ins of choice. Divide the batter evenly throughout each ramekin or muffin cup. (About 6 TBS in of batter in the ramekins or 3 to 4 TBS in muffin cups) Use a butter knife and spread the batter evenly and smoothly throughout the ramekins/muffin cups.
  • If desired sprinkle some more keto chocolate chips, nuts or topping of choice. Pat the topping (if using) gently into the batter. Air fry at 325 degrees for 4 to 8 minutes or bake at 325 degrees 10 to 15 minutes until desired level of done. (I like gooey brownies, so I air fried 4 to 5 minutes)
  • Open air fryer and allow the cups to cool 5 minutes to cool and firm up. Remove the cups, serve warm or allow to cool to room temperature. If desired top with keto whipped cream or keto ice cream.
