Keto Barbecue Chicken Bacon Tacos

Servings: 8 tacos
Ingredients
- 2 lbs boneless chicken thighs
- 1 lb bacon
- 1 cup keto Korean barbecue sauce or any barbecue sauce of choice
- 2 tsp dry parsley
- 1/2 tsp ground cumin
- 8 10 inch keto soft tortillas
- shredded cheese, lettuce, chopped onion or toppings of choice
Instructions
- Lightly brush the chicken with some olive oil. Season the chicken with salt, pepper and any dry seasonings of choice (I use garlic powder, onion powder and ground ginger) Cook the chicken on an indoor grill for 7 minutes until no longer pink. If no indoor grill, cook in a preheated, greased skillet for 5 to 7 minutes on each side until no longer pink and internal temperature is at least 160 degrees.
- While the chicken is cooking cook and crumble the bacon. Remove the chicken from the heat and let it sit for 5 minutes. Chop the chicken into bite size pieces. Place the chopped chicken in a large mixing bowl. Add the Korean barbecue sauce, parsley and dry cumin. Stir until combined and the chicken is fully coated.
- Spoon the desired amount of the chicken mixture into one of the tortillas. Top the meat with the desired amount of the crumbled bacon. Top the bacon with the desired amount of cheese, lettuce, onion and/or toppings of choice. Serve warm
