Ingredients
- 1 lb lean ground beef
- 76 grams (1/3 cup) sour cream
- 4 oz. cream cheese
- 80 grams (1/3 cup) salsa
- 3 TBS dry taco seasoning
- 4 oz (1 cup) shredded cheese,
- 12 6-inch soft keto tortillas
- guacamole or dip of choice
- 3 TBS olive oil
Instructions
- Preheat oven to 425℉. Line a large baking sheet with parchment paper. Set aside. Place the beef in a large skillet over medium heat. Chop the beef into small pieces and cook 5 to 7 minutes or until no pink. Drain excess fat and return beef to skillet.
- Stir in the sour cream, crem cheese and salsa until combined and cream cheese is melted. Stir in the taco seasoning until combined. Gradually stir in the shredded cheese. Stir constantly until the cheese is fully melted.
- Spoon 3 TBS of filling off to one side of each tortilla. Roll the tortilla tightly over the filling. Place seam-side down onto the prepared baking sheet. Brush all sides of each taquito with the oil and place back on the baking sheet seam-side down. Bake in the preheated oven for 15 minutes until golden and crisp.
- Remove the taquitos from the oven and allow to cool on the pan 5 minutes to continue to crisp up. Place desired amount on a serving plate. Serve with guacamole or dip of choice.
