Ingredients

  • 10 grams (2 TBS) whole psyllium husk
  • 112 grams (1 cup) coconut flour
  • 14 grams (2 TBS) golden flaxseed meal
  • 11 grams (1 TBS) baking powder
  • optional dried herbs for flavor I used 1 TBS instant dry yeast and 2 tsp granulated monkfruit sweetner
  • 3 large eggs, room temperature
  • 1/2 cup butter, melted
  • 15 ml (1 TBS) apple cider vinegar for texture and color balance
  • 200 ml (14 TBS) HOT water

Instructions

  • Preheat oven to 350 degrees. Line an 8-inch round cake pan. Grind the whole psyllium husks until they are about half of their volume. Place the ground psyllium husk ina medium mixing bowl. Sift the rest of the dry ingredients into the mixing bowl with the ground psyllium husk.. Set aside.
  • Beat the eggs in a large mixer bowl on medium speed for 4 minutes or until frothy. Add the remaining wet ingredients and beat until fully combined. Keep the mixer running on medium-low speed and gradually add the dry ingredients to the wet ingredients. Let everything beat together until a moist dough forms.
  • Scrape down the sides of the mixer bowl and push the dough to the center tof the bowl. Knead the dough in the bowl for 2 minutes or until it forms a smooth ball. Allow the dough to sit at room temperature for 15 minutes to absorb the excess moisture.
  • Divide the dough into 11 equal portions. Roll each portion into a smooth ball and place them side by side into the prepared cake pan. Use the palm of hand and lightly flatten the tops of the rolls. In a small bowl whisk together 1 large egg and 1 TBS water until fully combined. Brush the egg wash lightly over the tops of the rolls.
  • Place the rolls in the preheated oven. Bake at 350 degrees for 30 to 35 minutes or until golden. Once baked remove the rolls form the oven and allow to cool in the pan for 20 minutes until firm. Once firm remove the rolls from the pan and transfer them to a wire rack. Allow them to sit on the rack for 1 hour to continue to firm up.
  • When ready to eat cut rolls in half to create a top and bottom. Fill with desire spread of choice. Leftovers can be frozen up to 3 months.
