Keto Buffalo Glazed Chicken

Servings: 3 chicken breast halves
Ingredients
- 3/4 cup apple cider vinegar
- 1/4 cup melted butter
- 1 tsp lemon juice
- 1 TBS chili powder more or less depending on desired level of spicy
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp paprika
- 1/8 tsp Worcestershire sauce
- 1/3 cup hot sauce of choice
- 1/8 tsp cayenne pepper more or less according to taste
- 1 TBS honey substitute
- 3 large boneless skinless chicken breast halves (about 2 lbs)
Instructions
- Preheat oven to 425 degrees. In a 3 quart casserole dish Whisk together all ingredients except chicken breast halves until fully combined
- Add chicken breast halves and turn to fully coat in the sauce. Spoon extra sauce on top of the chicken breasts if needed
- Cover dish loosely with foil. Bake at 425 degrees for 20 minutes
- Uncover and bake another 15-20 minutes or until no longer pink and the internal temperature is at least 165 degrees. Let rest for 5 minutes before serving Serve with extra sauce

Keto Coconut Flour Chicken Strips

Ingredients
- 1 1/2 lbs boneless skinless chicken breasts
- 1 cup coconut flour
- 2 tsp salt
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp paprika
- 2 tsp dry oregano
- 1 tsp celery salt
- 1 tsp dry basil
- 1 tsp black pepper
- 1 cup oil of choice, plus more for frying
Instructions
- Fill deep fryer with oil and preheat to 375 degrees. If no deep fryer place about 2 cups oil in a large stovetop skillet and preheat the oil to 375 degrees (about 7-10 minutes)
- Cut chicken breast into strips about 1/2 inch thick. Set aside
- In a large mixer bowl whisk together all dry ingredients until no lumps are in the dry ingredients
- In a shallow bowl bowl place the oil. Place the chicken strips one at a time into the oil and turn to coat. Allow excess oil to drip back into the bowl
- Place oil coated chicken strips into the dry ingredients and turn until fully coated pressing the coating on as you turn the chicken
- Place coated oil into deep fryer basket in a single layer. Fry about 6-8 minutes or until golden and the internal temperature is at least 160 degrees
- If using stovetop skillet fry 6 minutes, turn and fry another 6 minutes or until golden and internal temperature is at least 160 degrees
- Place cooked chicken strips onto a lined paper plate to absorb the excess oil. Serve warm with favorite dipping sauce
