Ingredients

  • 2 large red bell peppers
  • 1 small zucchini, chopped
  • 1/2 cup canned baby corn, chopped
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tsp dry ranch seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup shredded mozzarella cheese
  • 1 lb sirloin steak

Instructions

  • Preheat oven to 425 degrees. Cut the bell peppers in half vertically to create to equal halves. Use a spoon and scoop out the seeds and the white membrane of the peppers. Place the pepper cups onto the prepared baking sheet and set aside. Line a large baking sheet with parchment paper and set aside. In a medium mixing bowl combine the zucchini, baby corn and dry seasoning. Stir to fully coat the vegetables with the dry seasonings
  • Divide the filling evenly throughout the prepared pepper cups and set aside. Place the steak in a large casserole dish. Season the steak with paprika, onion, powder, garlic powder, dry Italian seasons, salt and pepper. Place the steak and peppers in the oven. Bake for 15 minutes.
  • Keep the steak in the oven. Remove the peppers from the oven. Top the peppers with desired amount of shredded cheese. Place the peppers back into the oven with the steak. Bake for another 5 minutes or until the cheese is melted and the steak is done to desired level of pink.
  • remove the steak and peppers from the oven. Allow to sit for 5 minutes before serving. This can be served separate as a main dish and side or chop the steak in bite size pieces and serve over the peppers.
