Ingredients

  • 28 grams (1/4 cup) coconut flour
  • 39 grams (6 TBS) golden flaxseed meal
  • 8 grams (2tsp) baking powder
  • 1/4 tsp salt
  • 1/2 TBS instant dry yeast, optional
  • 2 large room temperature eggs
  • 2 TBS butter, melted

Instructions

  • Sift the dry ingredients into a large mixing bowl until there are no lumps. Stir the eggs and melted butter into the dry ingredients until a smooth, wet dough forms. Scrape down the sides of the bowl. Knead the dough in the bowl for 1 minute until the dough forms a ball. Preheat a large skillet over medium-low heat for 3 minutes or until warm.
  • Line a clean worksurface. Divide the dough into 3 equal portions. Roll each portion into a smooth ball. Flatten the balls into 3-inch diameter circles. Place the muffins into the preheated skillet. Cover the skillet. Cook 1 to 2 minutes until the underside in brown. Turn the muffin over. Cover and cook under 1 to 2 minutes until brown on both sides.
  • Remove the muffins from the skillet. Cool completely before slicing and serving
