5 Minute Keto Chicken Salad

Ingredients
- 12 1/2 oz canned chicken or tuna
- 3 TBS mayonnaise
- 3 TBS sour cream
- 1 TBS lemon or lime juice
- 1/2 tsp ground cumin
- 1 tsp onion powder
- salt and pepper to taste
- 1/2 medium cucumber, chopped
- 1 medium Roma tomato, chopped
- 1/2 small jalapeno, chopped and seeded
- 1 mini sweet pepper, chopped and seeded
- 1 cup canned baby corn drained, and chopped
- 2 TBS fresh cilantro, chopped
- 1 tsp chili powder
Instructions
- Completely drain the canned chicken/tuna. Use a fork and shred the chicken/tuna. Combine everything in a large mixing bowl. Stir everything together until fully combined and all the vegetables are completely coated. Serve immediately or cover and chill in the refrigerator at least 1 hour before serving. Serve in a wrap, sandwich or as a snack/appetizer on keto crackers/chips.
