  • 240 grams (1 cup) plain Greek yogurt
  • 10 grams (2 tsp) apple cider vinegar, adjust to taste
  • 1/2 tsp granulated sugar substitute, adjust to taste I use granulated Lakanto's monkfruit sweetener
  • 1/4 tsp ground mustard
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp dry dill weed
  • 1 TBS dry Italian seasoning
  • 2 tsp dry oregano
  • 1 large cucumber, chopped my cucumber was about 294 grams
  • 1/4 of a medium onion, chopped, adjust to taste
  • 8 cherry tomatoes, cut in half


  • In a large mixing bowl combine the yogurt, vinegar and dry seasonings. Stir until everything is fully combined. Gradually fold in the vegetables. Stir until the vegetables are fully coated with the dressing. Serve immediately or cover and store in the refrigerator until ready to use. This can be made up to 2 days in advance.
