Easy Keto Bacon Wrapped Chicken Bites

  • 1 lb boneless chicken breast
  • 1/2 lb bacon
  • 67 grams brown sugar sweetener (1/3 cup) I use brown monkfruit sweetener
  • 1/2 TBS mild chili powder
  • 1/8 tsp cayenne pepper


  • Preheat oven to 350 degrees. Cut the chicken breasts into pieces that are about 1 inch in size. Set aside. Cut the bacon into thirds. Place one piece of chicken at the end of one piece of cut bacon. Roll the bacon over the chicken piece until fully wrapped then place seam side down.
  • Continue the wrapping process until all the chicken pieces are fully wrapped. Poke a toothpick through the center of each chicken wrap to secure the wrap. Line a large baking sheet with foil. Place an oven fryer rack or cooling rack on the foil lined baking sheet. Set aside.
  • Place the sweetener, chili powder and cayenne pepper in a wide bowl. Use a fork and stir together until there are no lumps. Place the wrapped chicken bites into the sweetener mixture. Use fingers and sprinkle the sweetener mixture over the chicken bite to lightly coat the outside.
  • Lift from the mixture and lightly tap the chicken bite to remove and excess sweetener mixture. Place the coated chicken bite seam side down onto the prepared rack. Repeat the coating process until all the chicken bites are coated and on the prepared rack. Leave space between each chicken bite.
  • Place the chicken bites into preheated oven. Bake at 350 degrees 30 to 35 minutes or until the chicken is fully cooked and the bacon is crispy. Remove from the oven and allow to cool on the rack 3 to 5 minutes to avoid burning fingers. Serve immediately.
