  • 420 grams mixed berries (3 cups)
  • 100 grams granulated sweetener of choice (1/2 cup) more or less according to taste
  • 15 mililiter lemon juice (1TBS)
  • 60 grams coconut flour (9TBS)
  • 9 grams baking powder (2 tsp)
  • 1/4 tsp salt
  • 4 large eggs, room temperature
  • 1/4 tsp vanilla extract more or less according to taste
  • 1/2 cup butter, melted and cooled


  • Preheat oven to 375 degrees. Line an 8 x 8 inch cake pan with parchment paper
  • In a medium mixing bowl stir together the berries, sweetener and lemon juice. Dump into the prepared cake pan and tilt pan to evenly distribute the berries throughout the pan
  • In another medium mixing bowl sift or whisk together the remaining dry ingredients until there are no lumps
  • Stir in the eggs and vanilla until fully combined and a crumbly dough has formed
  • Crumble the dough over the berry mixture. Place in preheated oven. Bake at 375 degrees 35-40 minutes until filling is bubbly and topping is golden
  • Remove from oven and allow to cool at least 15 minutes or until firm enough to remove
  • Cut desired slice. Serve slightly warm with whipped cream, keto cool whip, or keto vanilla ice cream

  • Hi Janet, I’m confused about the 1/2 cup of butter listed in the recipe ingredients. I don’t see in the recipe directions where you used any butter. Please let me know soon, I want to try the recipe. I love how you give us coconut flour recipes. Thank you!

    • You’re welcome. Once the dough is crumbled over the top of the berry mixture then drizzle the 1/2 cup of melted butter over the dough crumble.
