Ingredients
- 192 grams granulated monkfruit sweetener or granulated sweetener of choice (1 cup) more or less
- 1 tsp vanilla extract (optional)
- 264 grams peanut butter (1 cup) nut free: use seed butter or coconut butter + peanut flavoring
- 1 large egg, room temperature
- 2 TBS cocoa powder for chocolate version only
Instructions
- Preheat oven to 350 degrees. Line a large baking sheet with parchment paper. Set aside
- In a large mixing bowl combine all ingredients. Stir until a smooth dough like texture is formed
- Scoop dough out 1 TBS at a time onto prepared baking sheet about 2 inches apart
- Roll each scoop into a smooth ball. Flatten and shape each cookie into desired shape and thickness. Bake at 350 for 12 minutes or until golden
- Remove from the oven. Allow to cool on pan about 15 minutes or until firm. Transfer to a wire rack. Allow to cool completely before frosting (if desired) Sore leftovers in airtight container in the refrigerator up to 1 week
