Ingredients
- 1 lb chicken, cooked and chopped
- 15 oz (1 1/2 cups) keto refried beans substitute
- 127 grams (1/2 cup) salsa
- 1 TBS dry taco seasoning
- 4 oz (1 cup) shredded cheese
- 6 large keto soft tortillas
- 1 1/2 TBS olive oil
- sour cream, salsa, guacamole or toppings of choice, optional
Instructions
- Preheat the oven to 400 degrees. Line a large baking sheet. In a large bowl stir together the chicken, refried beans substitute, salsa, and taco seasonings. Stir to fully combine. Gradually fold in the cheese until fully combined. Scoop 1/2 cup of the filling into the center of the tortillas.
- Fold the sides of the tortillas over the filling. Roll the tortilla over to form a burrito. Brush the entire outside of each chimichanga generously with the oil. Place the chimichangas seam side down onto the prepared baking sheet. Place in the preheated oven and bake 25 minute or until crisp
- Remove from the oven and allow to cool 5 minutes before serving. Serve warm with the toppings of choice.
