Simple 2 Ingredient Keto Crackers

Ingredients
- 1 cup almond flour can also use pumpkin or seed flour see notes
- 1/2 large egg, room temperature see notes
- 1/4 tsp salt, optional
- flavors of choice, optional see notes
Instructions
- Preheat oven to 350 degrees
- In a large mixing bowl stir together the almond flour, egg and salt (if using) until fully combined and smooth. Press the dough into a tight ball. Massage the ball slightly just to make sure all ingredients are smooth
- Line a clean work surface with parchment paper. Make sure the parchment paper is as long as a large baking sheet
- Place the dough ball onto the parchment paper Press or roll out the dough as thin as possible without it being see through (think the thickness of a wheat thin about 1/16 of an inch)
- Lift the parchment paper with the dough and place it onto a large baking sheet. Use a knife or pizza cutter and cut the dough into the desired size squares. (think wheat thins)
- Spread the squares throughout the baking sheet. Bake 10-12 minutes or until golden on the edges.
- Remove from the oven. The crackers will still be soft but will crisp up as they cool
- Allow to cool on the pan at least 15 minutes or until firm. Transfer to wire rack and allow to cool completely. Eat immediately or store in an airtight container at room temperature of up to 1 week
Notes
To measure out 1/2 of an egg. Whisk 1 egg in a small bowl and measure out about 2 TBS of the mixture. If doubling this recipe use a whole egg
Flavor Ideas:
garlic : stir in 1/2 tsp of garlic powder
nacho cheese: stir in 1/2 tsp chili powder, sprinkle dough lightly with shredded cheese before cutting into crackers
herb: stir in 1/2 tsp of dried herbs of choice

Ingredients
- 14.5 oz can diced tomatoes, undrained
- 3 TBS tomato paste
- 1/2 cup tomato sauce
- 1/2 cup salsa
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 of a medium onion, chopped
- 14.5 oz can black soy beans, drained and rinsed optional
- 1 medium yellow squash or zucchini, chopped
- 1 lb cooked ground meat, optional
- toppings of choice (cheese, sour cream etc) optional
Instructions
- In a large 5 quart stockpot over medium heat stir together diced tomato, tomato paste, tomato sauce, and salsa until fully combined and the tomato paste is smooth
- Add salt, pepper, ground cumin, chili powder, garlic powder, and onion powder until fully combined
- Add chopped onion, black soy beans (if using), squash and ground meat (if using). Stir to fully combine
- Bring to low boil over medium heat. Reduce heat to low. Simmer uncovered for 15-20 minutes or until heated and the flavors have set.
- Serve warm into desired serving dishes. Top with desired toppings

This recipe makes about 4-5 cups of chili 1 serving is about 1 cup of chili
