2 Ingredient Keto Dairy Free Whipped Cream Frosting

Servings: 3 cups
Ingredients
- 12 oz coconut cream (1 1/2 cups)
- 33 grams powdered monkfruit/allulose blend or powdered sugar sweetener of choice (1/4 cup)
- 3/4 tsp vanilla extract of flavored extract of choice, optional
Instructions
- Place whisk attachment on a standing mixer. Scoop the cream into a large mixer bowl. Turn mixer onto medium-low.
- Gradually add the powdered sweetener and allow it to whisk in after each addition. Once all the sweetener is added increase speed to medium and whisk on medium about 3 minutes or until the cream is thick
- Increase speed to medium-high and whisk on medium high another 1 minute or until the cream forms peaks. You know this is done when you remove your whisk attachment and a peak has formed at the end of the attachment
- Scoop frosting into an airtight container and place in the refrigerator for 1 hour to thicken. This will yield enough frosting to frost a two layer round 8 inch cake
