3 Quick Keto Candy Recipes

Quick Keto Creamy Caramels

This recipe is designed to teach everyone how to make quick and easy keto caramel candy

Ingredients

  • 2 TBS room temperature butter
  • 1/4 cup granulated sweetener of choice I used Allulose because it dissolves the best
  • 1/4 cup brown Swerve or brown sugar sweetener of choice
  • 1/4 cup keto corn syrup substitute click to see my recipe
  • 1/4 cup keto sweetened condensed milk click to see my recipe
  • 1/2 tsp vanilla extract

Instructions

  • Line an 8 x 4 inch loaf pan with parchment paper. Allow the paper to hang over the sides to create "handles" Lightly spray the paper and sides of the pan with cooking spray. Set aside
  • In a medium microwave safe bowl use a fork and stir together the granulated sweetener and brown Swerve until fully combined and no lumps are in the Swerve.
  • Add the keto corn syrup, keto condensed milk and the vanilla extract. Whisk until fully combined
  • Add the butter and microwave on high for about 1 1/2 minutes or until the butter is fully melted and the mixture is hot. Bowl will be hot. Use oven mitts or towel to remove the bowl from the microwave
  • Stir until the butter is fully combined and the sweeteners are dissolved
  • Microwave on high for another 2 minutes or until slightly bubbly.
  • Stir to make sure everything is fully combined. Microwave on high once again for another 2 1/2 minutes or until bubbly.
  • Pour caramel into prepared loaf pan. Slightly tilt the pan back and forth until evenly coating the bottom of the pan. Allow to sit at room temperature for about 4 hours or until firm and no longer sticky to the touch
  • Grasp the overhanging parchment paper and lift the caramel slab out of the pan. Cut into the desired size and shape. Wrap each piece in small strips of parchment paper. Store wrapped caramels at room temperature for up to 5 days

Notes

These caramels contain less than 1 gram of net carbs a piece

Basic Keto Bon Bons

Ingredients

  • 2 TBS room temperature butter
  • 98 grams powdered sweetener of choice (14 TBS)
  • 18 grams room temperature plain Greek yogurt or coconut cream (1 TBS)
  • 1/4 tsp vanilla extract or extract flavor of choice

Instructions

  • Line a large baking sheet with parchment paper
  • In a large mixer bowl beat butter on medium for about 30 seconds or until creamy
  • Reduce speed to low. Gradually add the powdered Swerve in small amounts, Stop mixer and scrape down the sides as needed, Once the Swerve is completely added increase the speed to medium. Beat on medium for about 30 seconds or until crumbly
  • Add the yogurt and vanilla or extract of choice. Beat on medium for about 30 seconds or until a "dough" begins to form
  • If desired fold in some add ins such as shredded coconut, crushed nuts etc. Cover with plastic wrap and freeze for about 10 minutes or until able to be scooped
  • Scoop mixture out 1 TBS at a time onto prepared baking sheet. Form each scoop into a tight ball and place back onto the baking sheet. If desired roll the balls into toppings such as melted chocolate, crushed nuts, crushed candy etc.
  • Place in the refrigerator about 15 minutes or until the toppings are set. If dipped in melted chocolate set in refrigerator 30 minutes or until the melted chocolate is firmed. Store leftovers in an airtight container in the refrigerator up to 5 days

Easy Ketos Peanut Butter Chocolate Bon Bons

This recipe is designed to teach everyone how to make easy keto peanut butter chocolate bon bons

Ingredients

  • 1/2 cup peanut butter
  • 2 TBS peanut butter
  • 1/2 cup powdered Swerve more or less depending on the texture of peanut butter
  • 1 TBS melted butter
  • 1/4 tsp vanilla extract
  • 1/2 cup keto chocolate chips

Instructions

  • Line a large baking sheet with parchment paper
  • In a large mixer bowl combine peanut butter, powdered Swerve, melted butter and vanilla. Beat on low for about 10 seconds or just to moisten the Swerve. Increase speed to medium and beat on medium for about 30 seconds or until a crumbly "dough" is formed. If your peanut butter is oily you may need to add a little more powdered Swerve to create a "dough"
  • Scoop the filling out 1 TBS at a time onto the prepared baking sheet. Place in the freezer about 10 minutes or until the mixture can be rolled into balls
  • Roll each scoop into balls and freeze another 20-30 minutes or until solid
  • In a shallow microwave safe bowl melt chocolate chips in the microwave about 30 seconds or until smooth
  • Remove balls from freezer. Roll balls one at a time in the melted chocolate until fully coated. Place back onto the baking sheet and refrigerate about 30 minutes or until solid. Store leftovers in the refrigerator
